Ingredients:
extra virgin olive oil
1 garlic bulb
1/2 of a white onion, diced
1/2 cup of white beans
1 handful of almonds
1/2 granny smith green apple, diced
1/2 cup of diced eggplant (some call it 'aborgine')
1 small can of tuna in water
1/2 of an avocado
vegetable spaghetti noodles
salt, pepper, curry powder, red wine vinegar
Start by chopping up the garlic as small as possible.
Pour some olive oil in a medium size pan, set heat on the stove to medium. Add the garlic.
Dice the 1/2 of green apple into tiny bits, add to the pan.
Add the beans.
Add everything except the tuna and avocado.
Sauteed it for a bit, let it get warm. Add your seasonings.
Then add the tuna fish. Let it get hot.
Brown it some.
Do not add the avocado yet.
Boil some water, when it's ready, throw in a small handful of vegetable spaghetti, add a little olive oil so the noodles won't be too sticky.
Taste the veggies/fish and add more seasonings if you feel it's necessary. Curry powder is a blessing, so is the vinegar, but be careful with the vinegar because combined with the apple it can be a little overpowering. Balance with salt, pepper, and a little sugar if you overdo it like I did.
Boil the noodles till they're ready, then strain them. Pour them back into the pan you cooked them in.
Take your 1/2 of an avocado and slice it into small squares, release into the noodles and mix them up.
Take your veggie mesh and pour them into the noodle pan, mixing with utensils.
Serve hot or cold.
I ate mine hot but saved the rest in the fridge so I can try it cold tomorrow. I have a feeling it will taste even better cold. For those of you who are vegan or do not like tuna, I recommend adding something a little salty in its place so it can balance with the apple. Maybe a squeeze of lemon or some other spices.
